Whip up this fail-proof delicious eggnog recipe and welcome your guests with a delicious glass of holiday cheer!
INGREDIENTS: (makes large volume)
- 12 large eggs
- 3 quarts/12 pints or 5-6 liters of whipping cream (crème liquide)
- 1 pound or 500 grams of icing sugar (sucre de glace)
- 3 cups of liqueur (dark rum, brandy or whiskey or mix)
PREPARATION: (prepare in advance)
Separate 12 egg whites from yolks in two bowls. Put whites aside.
In a large bowl, beat 12 egg yolks in a bowl with a mixer. Gradually add icing sugar while beating. It should create a creamy consistency and be light yellow in color.
Add 2 quarts of whipping cream (crème liquide) to mixture and beat lightly for few minutes)
Add liqueur and blend well.
Add sprinkle of nutmeg and then let bowl stand in refrigerator for at least 3-4 hours. Then remove to finish eggnog.
In a separate bowl, beat 12 egg whites until soft peaks appear. Pour whites into mixture and blend together gently.
Pour carefully into a large serving bowl.
Beat remaining whip cream into medium consistency and fold into eggnog.
Keep cold until ready to serve. Sprinkle with nutmeg and present with a ladle.
